Green tea
is picked, wilted and rolled. Green tea does not oxidize during rolling. Heat is added to prevent oxidation. At the same time, use your fingers to form the leaves into curls and press them against the sides of the wok. The leaves are then rolled. Numerous shapes have been created, each with a different flavor. Finally, the leaves receive a final heat treatment so that they are completely dried. The color of the brewed green tea is typically green or yellow, the taste ranges from toasted, grassy (pan-heated teas) to freshly steamed botanicals (steamed teas) with their mild, plant-like, somewhat bitter taste. The more popular varieties of green tea include Dragon Well (also known as Lung Ching), Genmai Cha, Gyokuro, Gunpowder Tea, Hojicha, Pi Lo Chun and Sencha, to name just a few.
