Cinnamon bark comes from the cinnamon tree, a tropical evergreen tree native to Sri Lanka, southern India and Madgascar. The cinnamon tree can grow up to 15 meters high; it is usually cut back in cultivation to keep it bushy and low and to stimulate the development of further shoots. The term “cinnamon” refers to the outer cork and bark layers of young trunks, branches or root shoots; the bark is removed and scraped off using a knife.
